- What is it? Two whole Madagascar vanilla pods, approximately 16cm long, containing aromatic seeds and a flavour-rich pod wall.
- Flavour Sweet, creamy and floral with deep classic vanilla and soft woody notes.
- Common uses Custards, ice cream, cakes, biscuits, creams, syrups, poached fruit and homemade vanilla sugar.
- Pairs well with Chocolate, coffee, cream, berries, citrus, cinnamon, caramel and tropical fruit.
- How to use Split the pod lengthways, scrape out the seeds and infuse both seeds and pod in the recipe.
- Compare with More rounded and complex than vanilla essence, with both visible seeds and an infusable pod.
- Possible substitute Use vanilla paste or a good vanilla extract, adjusting to the recipe.
- Storage Keep the pods sealed, cool and away from light; do not refrigerate, as condensation can encourage mould.
Good to know: After infusion, the rinsed and dried pod can be placed in sugar to make vanilla sugar.
