Sheer Khurma - South Asia Serves 6–8

A creamy, festive pudding made with vermicelli, dates, milk, and a sprinkle of spice

Ingredients:

  • 1 litre whole milk

  • 1/2 cup vermicelli (broken into 2-inch pieces)

  • 1/4 cup ghee

  • 10–12 dates chopped

  • 2 tbsp chopped almonds

  • 2 tbsp chopped pistachios

  • 1 tbsp golden raisins

  • 1/2 tsp cardamom powder

  • A pinch of saffron (optional)

  • 2–3 tbsp sugar (adjust to taste)

Method:

  1. Heat ghee in a pan and fry the vermicelli until golden.

  2. Add milk and bring to a gentle boil. Simmer for 10–15 minutes.

  3. Add dates, sugar, cardamom, and saffron if using.

  4. Stir in nuts and raisins, cook for another 5–7 minutes.

  5. Serve warm or chilled.

Ma'amoul - Middle East
Makes ~30 small cookies

Shortbread-style cookies filled with dates or nuts and shaped in beautiful moulds

Ingredients (Pastry):

  • 500g fine semolina

  • 200g unsalted butter (softened)

  • 1/4 cup sugar

  • 1/4 cup milk

  • 1 tbsp rose water or orange blossom water

  • Pinch of salt

Filling (choose one or mix):

  • 1 cup pitted dates (mashed, softened with a little butter)

  • OR 1/2 cup finely chopped walnuts + 1 tbsp sugar + cinnamon

  • OR 1/2 cup pistachios + 1 tbsp sugar + rose water

Method:

  1. Mix semolina, butter, and sugar—rub together until crumbly.

  2. Add milk, salt, and rose water. Knead to form a soft dough. Let it rest for 1 hour.

  3. Shape into balls, press a small dent, fill with your chosen filling, and seal.

  4. Press into Ma’amoul moulds or shape by hand.

  5. Bake at 180°C (160°C fan) for 15–20 minutes until just golden.

  6. Cool and dust with icing sugar if desired.

Kahk - Egypt Makes ~40 small cookies

Buttery, crumbly cookies dusted in icing sugar—often filled with dates or honeyed nuts

Ingredients (Dough):
  • 500g plain flour

  • 250g ghee (or clarified butter)

  • 2 tbsp sesame seeds

  • 1 tbsp yeast

  • 1 tsp sugar

  • 1/4 cup warm milk

  • Pinch of salt

Filling (optional): 

  • Date paste, or a mix of honey and chopped nuts

  • OR plain if you prefer “Kahk bi sukar” (just sugared)

To finish:

  • Icing sugar for dusting

Method:

  1. Mix yeast, sugar, and warm milk. Let it foam.

  2. Combine flour, sesame seeds, and salt. Rub in ghee.

  3. Add yeast mixture and knead into soft dough. Rest for 1 hour.

  4. Shape into balls, fill if desired, and flatten slightly.

  5. Bake at 180°C (160°C fan) for 15–18 minutes until just golden.

  6. Cool and generously dust with icing sugar.
