Pulled Pork is springing up all over the place, this is an authentic recipe version
Serves: 6-8
Ingredients
- 2kg Boned Pork Shoulder, cut into large cubes fat removed
- 1Ltr of Beef Stock
- 4 Cups of Chilli Salsa
- Water
- Salt to taste
- 16 Tortillas
- Choice of Chilli - if using whole pods, use 2-3 pods of choice, deseed and vein and chop up dry, or use 1tsp of powder or 2 tsp mix
Instructions
- In a large heavy sauce pan, on a medium high heat, place the pork in the broth, salsa and chilli, with enough water to completely cover the meat, cover bring to the boil, and simmer for 3-4 hours until the pork falls apart
- Preheat the oven to 400f gas mark 6 230c, remove the meat and discard the liquid
- Break the pork onto smaller chunks in a roasting dish for 15-20 mins until crispy
- Heat the tortillas
- To serve fold the tortillas in half and place a spoon of the pork
- Serve with grated lettuce with sprinkle of salt and vinegar, add the remaining salsa and if you would like add beans, avocado and or cheese of your choice
