Sichuan - Szechuan Peppercorns

There is some debate in this world, is it Szechuan or Sichuan - its both technically, I have been informed by my Chinese friends its Sichuan, but in the west we have grown up with Szechuan

Before the internet and the ease of just asking local people what it is locally, spice merchants have come up with different ways to describe the produce, this has resulted in many different names for the same spice

Whatever the main name is called, did you know there is more than just one Sichuan Szechuan Pepper and I am not talking about green or red here

All over the Orient the local climates have altered the strain of the plants to produce different flavours but still keeping the same character of sharp numbness
