Cayenne Chilli Powder Quick Reference
- What is it? A fine powder made from Indian S4 Cayenne chillies, the familiar cayenne type used across the UK and Europe.
- Flavour A classic, straightforward chilli flavour with clean warmth and little sweetness.
- Heat level Around 20,000 SHU; approximately Madras curry heat.
- Origin India.
- Common uses Curries, chilli con carne, sauces, soups, marinades, rubs and seasoning blends.
- Pairs well with Cumin, coriander, turmeric, garlic, black pepper, tomato and ginger.
- How to use Add gradually, stir and taste. About one-quarter teaspoon replaces one whole Cayenne pod.
- Compare with Milder than S17 Cayenne and De Arbol; hotter and cleaner than paprika.
- Possible substitute S17 Cayenne for extra heat, or paprika plus a little hotter chilli for colour with controlled warmth.
- Storage Keep sealed in a cool, dry place away from direct sunlight to protect colour, aroma and flavour.
Good to know: This is the standard S4 Cayenne style familiar in generations of European and Indian cooking.
