A classic American Dish with Mexican and Texan influences - superb meal for the family
Use Mexican Chorizo with this recipe, the texture is softer than normal almost pate like which will infuse into the ingredients better
15 mins prep time : 50 minutes Cooking time : Serves 4
Ingredients :
- 2 Cups of Macaroni
- 1 Cup Milk
- 1 Tsp of Corn Flour
- 1 Cup of Cheddar Cheese - Strong here could hide the Pepper Jack Cheese
- 1 Cup of Peppery Jack Cheese - if you cannot find, use Monterey Jack Cheese
- 200g Mexican Chorizo
- 1/2 Cup of Minced Red Onion
- 2 Tbsp White Flour
- 1 Tsps Lime Juice
- 2 Tbsp Breadcrumbs
- 1 Tbsp Unsalted Butter
- 1 Tsp Chipotle Morita Powder or 2 Hydrated Chipotle Moritas Chopped finely
- Season to Taste
Instructions :
- Mix the Chipotle, Cheese and Corn Flour together to prevent the cheese from becoming stringy when cooked
- Heat up the milk and keep warm until you are ready to use
- Heat up a saucepan for the Macaroni - add salt to the water if you wish, bring to the boil and add the Macaroni - cook until a few minutes less than stated on the packet so the pasta is still al Dante - still firm to bite into
- Remove the Chorizo from its casing and place in a medium thick saucepan on a high heat – wait until the meat is sizzling and then reduce to a medium heat, stir constantly and cook for a few minutes
- Add the chopped red onion whole stirring – you can add habanero powder ½-1tsp for a hot version at this stage, stir into the mix – cook until the onions soften up
- Add the white flour to the pot and stir through, the contents will get clumpy now
- Now stir in the hot milk, a little at a time as you want the milk to infuse into the chorizo and onions and not burn, so stir and pout until the mixture if all mixed
- Bring to a simmer and cook for a few minutes
- Now add the Chipotle Cheese into the mix, stirring as you add, add the al dente macaroni and pour into a casserole dish
- Sprinkle with the breadcrumbs and scatter the butter all over the top
- Heat through for 25 mins or until the breadcrumbs are golden brown and smelling awesome
- Serve and Enjoy
