Chilli Con Carne Pack Recipe

This Con Carne recipe is for use with our Chilli Con Carne Seasoning or Mexican Chilli Pack

Recipe

  • 500g stew beef
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 can 400g red kidney beans
  • 1 onion
  • 3 garlic cloves
  • 4 Chipotle pods
  • 1 Ancho pod
  • 3 Cascabel pods
  • 2 teaspoons cumin
  • 2 branches of fresh coriander
  • Salt & Pepper
  • 1 teaspoon New Mexico Red powder
  • 2 teaspoons Mexican Oregano
  • a half teaspoon celery powder
  • 1 can 400g diced tomatoes
  • 1 tea spoon sugar
  • 1 dried Bay Leaf
  • 1 teaspoon dried thyme
  • 1 tablespoon gold Tequila (reposado)
  • 1 tablespoon vegetable oil
  • 1 cup red wine
  • 2 cups of water
  • One Chunk of Bitter Chocolate.  

Method

 Soak the Chipotle/Ancho/Cascable pods in warm water priorly during 20mn · Mix all the spices, chilli powder and aromatic herbs (except the corriander) in a small bowl · Stir the meat cut in pieces during 5mins, once browned take out from the pan

Stir together in the oil onion, green/red peppers cut in pieces, add garlic and keep on stirring during 5mn then throw the tablespoon of Tequila to deglaze them (you can use the tequila to flambé them, increasing the taste) · The chillies should be soft now, cut them in small pieces and add them to the pot · add the diced tomatoes, the sugar and the water, bring to a boil during 5mn

Reduce the fire and add the stirred beef inside, and all the spice mix together · add salt & pepper as you want depend on your usual taste · Cook everything during 30mn add beans then cover the pan and cook it 1 hour until the beef is very tender · uncover it and reduce the juice (if there's too much) boiling it a bit (watch out that nothing sticks/burns in the bottom!) garnish with cilantro and serve with tortilla chips.
