Chilli Refried Beans Recipe

The classic now comes with a little heat

Cook time 45mins : Serves a litre

Ingredients :

 

  • 450g Pinto Beans
  • Water
  • 0.5 Cup of Chopped Onions
  • 2 Tbsps of bacon fat or olive oil
  • Salt to Taste
  • Cheddar Cheese if you would like
  • Hydrated 5 pods of Chilli or 1 tsp of Chilli Powder - Can be any in this pack

Instructions :

  • 450g of Pinto Beans Canned are fine or cooked through if you are using dry, in water simmering for about 2.5hrs
  • Strain the cooked beans and put to one side
  • Cook the onions in a frying pan with the oil/fat until translucent, during this process add the serrano chilli and stir through
  • Add the pinto beans to the pan and ½ cup of water, stir through and with a potato smasher, mash the beans as you care cooking them – with care!
  • Add more water to ensure they do not dry out in this process, add the cheese and stir through if you would like
  • Serve and enjoy – will last a few days in an airtight container in the fridge
