Chorizo and Eggs Recipe

Spicy, filling, start your day right

Serves 2-3: Prep Time 10 mins: Cook Time 10 minutes

Ingredients

  • Olive Oil or Bacon Fat for great flavour
  • Sweet Pepper and or Spring Onions finely chopped - choice or have both
  • 100g Mexican Chorizo sausage, casing removed - look for a soft sausage
  • 3 Tbsps of Raisins, soaked in water for 10 mins and drained
  • Guajillo Pod hydrated and chopped finely or 1/4 - 1/2 tsp of guajillo powder
  • 6 eggs
  • Salt to taste
  • Tortillas or Bread

Instructions

  • In a frying pan on a medium hot heat, heat the oil/fat and cook through the peppers and onions and once softened added the chilli and cook for a minute or two while stirring
  • Move to one side of the pan and add the chorizo sausage, break up with a wooden spoon, add the raisins and cook the sausage through - remove any excess of fat
  • Add the eggs and stir to mix and cook through, season with salt if required
  • Serve with crusty bread or tortillas
