If you are adding these wonderful barks to a seasoning or blend we recommend you chose Indonesian as it will stand up to the complex flavours you are using
However for teas etc. we suggest Ceylon Cinnamon, it is sweeter than the Indonesian but delicate in flavour so can be hidden easily
