Quick Reference

What is it?: A salt-free Cuban-inspired seasoning of ancho, habanero, onion, mango, garlic, cloves, cumin, coriander, mint and coriander leaf.

Flavour: Fruity, savoury and aromatic, with ancho depth, mango tang and a sharper habanero heat balanced by herbs.

Common Uses: Marinated meat, vegetables, kebabs, wraps, sandwiches, eggs, mayonnaise and dipping sauces.

Pairs Well With: Pork, chicken, black beans, rice, lime, mango and peppers.

How to Use: Use as a dry rub or mix with citrus juice, oil, yoghurt or mayonnaise depending on the dish.

Compare With: Compared with Amba, Cuban Seasoning is more chilli and herb driven; Amba is more turmeric, mustard and sumac led.

Substitute: Use Brazilian BBQ for a milder citrus barbecue profile, or Chipotle Adobo for smoke instead of fruitiness.

Storage: Store sealed in a cool, dry place away from direct sunlight and steam.

Good to Know: Ancho and habanero provide two different chilli roles: deep dried-fruit flavour and a brighter hot finish.

My son needs to experiment with his air fryer, says this was excellent as a rub for chicken and pork.
