Description

Doner Kebab is a dish steep in history sadly destroyed by local take aways doing a bad job!

Doner kebab meat should be full of lamb sweetness with the flavouring enhancing the experience, our seasoning does just that

Take 500g of Mince Lamb, flatten out and sprinkle 2-3 tablespoons of doner kebab seasoning, add 1/4 -1/2 teaspoon of salt if you wish and mix well

Form into a bread dough style shape and leave to marinate for at least 30mins, 2 days is better

Cook for 120mins on 180c Gas Mark 4 for 120 minutes, turning half way through in a baking tray uncovered

Rest for 10 minutes, carve as thin as you can and serve with salad and flat breads

Ingredients : Turkish Oregano, Italian Herbs, Garlic, Onion, Black Pepper, Sumac, Cayenne

Very low in heat - just a hint to finish the flavour sensation of proper authentic doner kebab seasoning

Quick Reference

What is it?: A salt-free doner kebab seasoning of Turkish oregano, Italian herbs, garlic, onion, black pepper, sumac and a touch of cayenne.

Flavour: Savoury, garlicky and herb-led with sumac tang and only a low level of chilli heat.

Common Uses: Doner-style lamb or chicken, kebab meat, kofta, wraps and roasted vegetables.

Pairs Well With: Lamb, chicken, onion, flatbread, yoghurt, tomato, lettuce and sumac salad.

How to Use: Mix into minced meat or coat sliced meat with oil before marinating and cooking.

Compare With: Compared with Lebanese 7 Spice, this is more herb-garlic led and specifically designed for kebab flavour.

Substitute: Use Lebanese 7 Spice for warmer whole-spice character, or Baharat for a broader Middle Eastern grill seasoning.

Storage: Store sealed in a cool, dry place away from direct sunlight and steam.

Good to Know: Sumac supplies the light sour note normally associated with lemon in kebab dishes.
