Some of our Salts can only been found in one place, usually formed along time ago and for us to use today
However some salts are formed by the climate, as sea water washed up in shallow patches and then dried by the sun it leaves behind crystals of salt
As the sea water evapourates the salt is formed like flower petals, hence the term Fleur de Sel - Flowers of Salt
This can be found in many areas of the world, this is Indian Sea Salt, known locally has Sunflakes

If the conditions are right the harvest starts in late summer by hand using traditional methods

Household favourite
mixed with dried thyme this makes a great fleur de sel for adding to dishes

I mix dried thyme and rosemary into this. Tasty.

Sicilian sea salt
If you want to cut down on your sodium intake then buy this. It’s ridiculously salty but in a mellow way so you don’t need loads at all. Exceptional sea salt.
