Description

Green Malabar Pepper is grown in in the mountainous densely forested region of Kerala in the south west of India

It is regarded as the home of pepper, being cultivated in small batches on small holding farms throughout the region

Grown from mid November to mid January harvested immature

Can be salted or pickled for preserving but this does lose its delicate flavours, gently dried to preserve its fresh pepper taste

French pepper sauces is a must but try over freshly sliced melon and strawberries for a delicacy only nature can produce

Quick Reference

What is it?: Malabar green peppercorns coarsely crushed for immediate use without a grinder.

Flavour: Fresh, herbaceous pepper warmth with visible texture and a gentler bite than coarse black pepper.

Common uses: Pepper sauces, pork, chicken, seafood, dressings and fruit dishes.

Pairs well with: Cream, fish, strawberries, mango and poultry.

Compare with: More textured than whole green peppercorns and fresher-tasting than coarse black pepper.

Substitute: Crush whole green Malabar peppercorns just before use.

Storage: Keep sealed in a cool, dry place away from steam, moisture and direct light. Whole peppercorns retain their aroma longer than ground pepper; close the pack promptly after use.

Good to know: The coarse cut exposes more surface area, so it releases aroma quickly and should be kept tightly sealed.

    Genuine green Malabar is my favourite pepper and although the whole peppercorns are not in stock at the time of writing this, I went for this coarse version. I was not disappointed at all. It has just the right heat and flavoursome pungency for my taste.
