Quick Reference

What is it?: Norwegian sea-salt flakes traditionally made from the cold North Sea waters around the Atlantic island of Gossa.

Flavour: A strong, clean salt flavour carried by light flakes that melt quickly like snow on the tongue.

Common uses: Use as a table or finishing salt; crush between the fingers over food just before serving.

Pairs well with: Fish, seafood, salads, steaks, potatoes and buttered bread.

Compare with: Lighter and faster-melting than coarse crystals, but stronger in flavour than many delicate finishing flakes.

Substitute: Maldon-style or other crisp sea-salt flakes may replace it.

Storage: Keep sealed in a cool, dry place away from steam and moisture. For smoked or delicate finishing salts, close the pack promptly to protect their aroma and crystal texture.

Good to know: Havsno translates as snow of the sea, describing both its northern origin and the way the flakes dissolve.
