Masala Blends are found all over India, they are also found all over the UK, there is not a single set recipe for this spice blend as each region puts their influence on the flavour

This is our version, a wonderful example of how good the kashmiri chilli is, let alone the superb masala of course

Low in heat and perfect for creating any dish you like, whether you are doing a full curry, meat or veg, a side dish, even baked beans or added to salted peanuts

This seasoning just works!

Use around 1 teaspoon of blend (7g approx) per Chicken Breast or add 2 teaspoons per meal

Mix in more mixture into your curry base of onions and or tomatoes once soft and allow to simmer

The aroma alone will convince you!

Quick Reference

What is it?: A low-heat salt-free masala built around Kashmiri chilli with cumin, coriander, fenugreek, ginger, garlic, fennel and whole warming spices.

Flavour: Aromatic, rounded and gently warming, with rich red colour from Kashmiri chilli but much less heat than Naga or Madras blends.

Common Uses: Curries, roasted vegetables, dhal, marinades, rice, spiced beans and savoury snacks.

Pairs Well With: Chicken, lamb, paneer, chickpeas, lentils, tomato, yoghurt and almonds.

How to Use: Use about 1 teaspoon per serving and fry briefly in oil or add to a wet marinade before cooking.

Compare With: Compared with Naga Masala, this is deliberately mild and colour-rich rather than intensely hot.

Substitute: Use Garam Masala for a warmer finishing spice, or Madras Curry Powder for a hotter, more direct curry profile.

Storage: Store sealed in a cool, dry place away from direct sunlight and steam.

Good to Know: Kashmiri chilli is valued as much for colour and rounded flavour as for heat.
