Lemongrass Flakes Organic - Quick Reference
What is it?: Organic lemongrass stem dried and cut into flakes.
Flavour: Fresh lemon fragrance with green, floral and lightly gingery notes, but without lemon juice acidity.
Common uses: Thai curries, soups, tea blends, marinades, rice dishes, broths and coconut sauces.
Pairs well with: Ginger, garlic, chilli, lime leaf, coriander, coconut, chicken and seafood.
How to use: Add during cooking so the flakes have time to soften and infuse. For clear broths or drinks, steep and strain.
Compare with: More textured and slower releasing than lemongrass powder, but easier to distribute than whole dried stalks.
Substitute: Standard dried lemongrass or fresh stalks can be used; lemon zest alone will not provide the same grassy perfume.
Storage: Keep dry and airtight to preserve the volatile aroma.
Good to know: The flake cut is a practical middle ground: small enough for blends, but large enough to infuse and strain from drinks or broths.

Super lemongrass flakes organic
This is the first time I have ordered this product. I often dont have fresh lemongrass to hand and it is quite expensive for just 3 bulbs. This is a very economic way to add that special taste to Thai curries. I always rehydrate the flakes and then blend it along with my other Thai paste ingredients. Works a treat. Lovely to add to marinades for fish, chicken, vegetables. Best to rehydrate first. Only rehydrate the amount you want e.g a tsp as once rehydrated it wont last so long. You can freeze it in ice cube trays for when you need it.
