Mace Ground Powder - Quick Reference
What is it?: Ground mace is the powdered aril that surrounds the nutmeg seed, offering a related but distinct spice character.
Flavour: Warm, fragrant and slightly sweet with floral, peppery and citrus-like notes.
Common uses: Sausages, pates, fish pies, cream sauces, soups, baking, doughnuts, custards and preserved meats.
Pairs well with: Nutmeg, cloves, cinnamon, white pepper, dairy, pork, chicken, fish, pumpkin and potato.
How to use: Add sparingly to sauces and savoury fillings, where its fine powder disperses quickly and evenly.
Compare with: Lighter, more perfumed and slightly sharper than nutmeg, with less of nutmeg's deep woody sweetness.
Substitute: Nutmeg can substitute, but use a little less and expect a rounder, heavier flavour.
Storage: Store airtight in a cool, dark place to protect its delicate aroma.
Good to know: Mace is especially useful where nutmeg would feel too heavy, such as pale sauces, fish dishes and fine forcemeats.
