Fajita Seasoning Recipe
Ingredients
1 red pepper
1 medium red onion
2 skinless free-range chicken breasts
2 limes
olive oil
4 small flour tortillas, or 2 large
150 ml fat-free natural yoghurt
50 g Cheddar cheese

Method
Put a griddle pan on a high heat.
Cut the peppers and onions into bite sized chunks and place in a bowl with the chicken into a bowl with 1 tablespoon of fajita seasoning. Squeeze over the juice of half a lime, drizzle over 1 tablespoon of oil mix well.
Put aside to marinate for 10 minutes or so while you make your salsa and guacamole
Warm the tortillas in the oven or grill for a minute on each side
Squeeze the remaining lime juice over the sizzling pan.
Serve separate and dig making your own Fajitas
Works great with steak too
