Unlike moles or sauces, Mexican adobo is defined by its tangy edge and its purpose as a pre-cooking marinade. It’s lighter than mole but packed with the same character, transforming your dishes with a punch of authentic flavour before they even hit the pan or grill.
To prepare, simply empty the paste into a pan and cook gently over medium heat for 5 minutes, stirring until it forms a smooth base. Gradually add 5.5 cups of water (or chicken stock for deeper flavour), and continue stirring until fully combined. Simmer to your preferred consistency — thinner for pouring, or thicker for coating.
