- What is it? A powder made from dried Scotch Bonnet chillies associated with Caribbean cooking.
- Flavour Aromatic and fruity beneath its strong heat.
- Heat level Very hot, around 200,000 SHU.
- Origin Caribbean variety, grown in the USA.
- Common uses Caribbean pepper sauces, jerk-style seasonings, marinades, stews, curries and hot rubs.
- Pairs well with Allspice, thyme, garlic, spring onion, citrus, mango, chicken, pork and fish.
- How to use Use in small pinches and build slowly, particularly in dry rubs and seasoning blends.
- Compare with Hotter than Cayenne and usually less fierce than Habanero powder, while sharing a fruity character.
- Possible substitute Habanero for more heat, or a milder fruity chilli where less intensity is needed.
- Storage Keep sealed in a cool, dry place away from direct sunlight to protect colour, aroma and flavour.
Good to know: Dry Scotch Bonnet is useful where fresh pods are unavailable but the characteristic Caribbean heat is still required.
