Quick Reference
What is it?: An Indonesian seasoning for Atjar Tjampur, the sweet-sour pickled vegetable side dish, made with sugar, ginger, turmeric and garlic.
Flavour: Bright, sweet, tangy and gently spiced once combined with vinegar, with turmeric adding colour and ginger adding freshness.
Common Uses: Pickled cucumber, carrot, cauliflower and onion; also useful for quick vegetable relishes.
Pairs Well With: Cucumber, carrot, cauliflower, onion, vinegar, rice dishes and grilled foods.
How to Use: Fry the chopped vegetables briefly, add about 1 tablespoon of seasoning with vinegar and salt, then simmer only until slightly softened.
Compare With: Compared with Ajam Panggang, this is a pickling blend rather than a roasting glaze and contains no heavy chilli profile.
Substitute: Use ginger, turmeric, garlic and sugar in similar proportions if the blend is unavailable.
Storage: Store sealed in a cool, dry place away from direct sunlight and steam.
Good to Know: Atjar Tjampur should retain vegetable texture; it is a quick pickle, not a long-cooked chutney.

Fresh, quality spices
Fresh spices, carefully packaged with recipe ideas. The Aleppo chilli and sumac were fantastic. I used it to make Yotam Ottolenghi's rhubarb and sumac kimchi.
