When looking for the shiitake mushrooms grown to full mature and dried to perfection there is a two tone colour with a brown top cap and white under cap

Tasty mushrooms
This is the first time I have bought shiitake mushrooms from Spicesontheweb, I usually get them from an oriental supermarket, and I must say I much prefer these. They have a fresher taste than others I have tried and really add a lovely flavour to miso soup and other Japanese dishes. I've also used them in stir fries and they blend in very well. I'll definitely buy them here in future.
