While traditionally grown in Japan there are limitations to how much is grown and exported, Shiitakes are now traditionally grown in China
When looking for the shiitake mushrooms grown to full mature and dried to perfection there is a two tone colour with a brown top cap and white under cap

Tasty mushrooms
This is the first time I have bought shiitake mushrooms from Spicesontheweb, I usually get them from an oriental supermarket, and I must say I much prefer these. They have a fresher taste than others I have tried and really add a lovely flavour to miso soup and other Japanese dishes. I've also used them in stir fries and they blend in very well. I'll definitely buy them here in future.
