While traditionally grown in Japan there are limitations to how much is grown and exported, Shiitakes are now traditionally grown in China

When looking for the shiitake mushrooms grown to full mature and dried to perfection there is a two tone colour with a brown top cap and white under cap

Shiitake Mushroom Slices - Quick Reference

What is it?: Dried shiitake slices are pieces of mature shiitake mushroom with concentrated savoury flavour and a firm, meaty texture after soaking.

Flavour: Deeply savoury and umami-rich with woody, earthy and lightly smoky notes.

Common uses: Broths, ramen, stir-fries, rice dishes, dumpling fillings, sauces, hot pots and vegetarian stocks.

Pairs well with: Soy sauce, ginger, garlic, sesame, spring onion, miso, noodles, rice and leafy greens.

How to use: Soak in warm water until softened, then drain and cook. Strain and retain the soaking liquid for stock or sauce.

Compare with: Slices provide texture and visible mushroom pieces, while shiitake powder blends invisibly into seasoning and sauces.

Substitute: Dried porcini can provide strong umami but gives a more European woodland flavour.

Storage: Keep completely dry and airtight; reseal promptly after opening.

Good to know: The soaking liquor carries a large amount of flavour, so discarding it wastes one of the most useful parts of the ingredient.

    Tasty mushrooms

    This is the first time I have bought shiitake mushrooms from Spicesontheweb, I usually get them from an oriental supermarket, and I must say I much prefer these. They have a fresher taste than others I have tried and really add a lovely flavour to miso soup and other Japanese dishes. I've also used them in stir fries and they blend in very well. I'll definitely buy them here in future.
