1895 ml ketchup
5 - 8 Chipotles
120 ml apple cider vinegar
120 ml molasses
3 g onion powder
4 g garlic powder
5 g ground mustard
3 g smoked paprika
3 g ground coriander
15 g kosher salt
3 g freshly cracked black pepper
220 g dark brown sugar
235 ml whiskey (such as Jack Daniels®)
30 ml liquid hickory smoke flavouring
Directions
Combine the ketchup, chipotle peppers in their sauce, apple cider vinegar, molasses, onion powder, garlic powder, ground mustard, smoked paprika, coriander, salt, black pepper, brown sugar, whiskey, and liquid smoke flavouring in a large pot, and bring to a gentle boil over medium heat, stirring frequently. Cook the sauce for 15 minutes, then reduce heat to low and simmer 15 more minutes, stirring often. Use immediately or refrigerate
