Smoky Chipotle Hummus Recipe

Take a Classic Recipe, Add A Classic Chipotle Chilli and you Get this Great Recipe

Ingredients

Serves 20

    880 g garbanzo beans, drained
    120 ml water
    60 g tahini (sesame-seed paste)
    60 ml fresh lemon juice
    30 ml olive oil
    2-4 chipotle pepper
    2 cloves garlic
    3 g cumin
    196 g roasted red bell peppers, drained
    6 oil-packed sun-dried tomatoes, drained
    25 g chopped cilantro
    3 g salt
    ground black pepper to taste

 

Method

 Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve.
