What is it?: Small aromatic seeds from the ajwain plant, also known as carom seeds.
Flavour: Powerful thyme-like aroma with peppery warmth, a slightly bitter edge and a hint of anise.
Common uses: Indian breads, pakoras, dals, potatoes, pulses, savoury snacks, pickles and vegetable dishes.
Pairs well with: Cumin, coriander, turmeric, chilli, asafoetida, potato, chickpeas and lentils.
How to use: Toast briefly or bloom in hot oil to release the aroma. Use sparingly, as even a small quantity can dominate a dish.
Compare with: Sharper and more medicinal than cumin seed, and more intensely thyme-like than ordinary dried thyme.
Substitute: A mixture of dried thyme and cumin seed can approximate the direction, though ajwain remains more pungent.
Storage: Store whole and airtight; crush only when required.
Good to know: Ajwain is often added to doughs and fried foods because its assertive flavour remains clear after high-temperature cooking.
