What is it?: Whole lemon cross-sections dried with both fruit and peel intact.
Flavour: Sharp, clean lemon with concentrated peel oils, lively acidity and a firm bitter edge.

Pairs well with: Ginger, honey, thyme, rosemary, garlic, black pepper, fish and chicken.
How to use: Steep whole in hot or cold liquids, simmer in savoury dishes, or chop for baking. Remove after infusion if the peel bitterness has reached the desired level.
Compare with: More complete and acidic than lemon peel because the slice includes dried fruit as well as rind.
Substitute: Lemon peel plus a little lemon juice can give a similar flavour, though not the same long-lasting garnish.
Storage: Keep airtight and dry.
