Mace Blades Organic 25g - Quick Reference
What is it?: Organic mace blades are the dried, lacy outer covering of the nutmeg seed, used whole for gentle infusion.
Flavour: Warm, floral and lightly sweet with peppery, citrus and nutmeg-like notes.
Common uses: Stocks, soups, cream sauces, rice, pickling, milk infusions, pates and slow-cooked dishes.
Pairs well with: Nutmeg, cloves, bay, cinnamon, white pepper, dairy, poultry and fish.
How to use: Infuse whole blades during cooking and remove before serving.
Compare with: More delicate than nutmeg and gentler than ground mace, making the blades useful where gradual extraction is preferred.
Substitute: Ground mace can be used in smaller amounts, or nutmeg for a rounder and sweeter flavour.
Storage: Keep airtight, cool and protected from light.
Good to know: The whole blade can season a clear liquid without clouding it or leaving powder behind.
