Tonka Beans Organic sound like they are tough and mean beans, they are not

The almond shaped bean gives off a fragrance of almonds, vanilla and hay

Can be used as substitute for vanilla, but should not be used as a whole substitute in sweet dishes

In Europe, the tonka bean was temporarily banned as a foodstuff due to its coumarin content. The ban was lifted in 1991

Advise on using, the Tonka Bean should be used very sparingly. Depending on the recipe for milk-based desserts, it is recommended to boil the beans in milk for a few minutes or grate them down a little with a nutmeg grater

Tonka Beans Organic 25g - Quick Reference

What is it?: Organic tonka beans are the aromatic seeds of Dipteryx odorata, used in very small quantities as a flavouring.

Flavour: Vanilla, almond, cherry stone, hay and warm spice with a deep perfumed sweetness.

Common uses: Custards, chocolate, ice cream, ganache, cakes, syrups and dessert sauces.

Pairs well with: Chocolate, vanilla, coffee, caramel, almond, cherry and cream.

How to use: Grate a very small amount with a fine grater directly into the mixture; the flavour is powerful and builds quickly.

Compare with: Vanilla is softer and creamier, while tonka is darker, nuttier and more complex.

Substitute: Vanilla with a little almond extract gives a simpler approximation.

Storage: Keep the whole beans dry, sealed and away from light; grate only as required.

Good to know: Tonka beans contain naturally occurring coumarin, so they are used sparingly as an aromatic accent rather than as a bulk ingredient.
