1 cup red or green bell pepper, chopped
1 cup chopped onion
3 cloves garlic, minced
1 tablespoon De Arbol chili powder
2 teaspoons ground cumin
1 28 oz. can plum tomato, undrained and chopped
1 15 oz. can kidney beans, drained
1 15 oz. can cannellini beans, drained
1 15 oz. can black beans, drained
2 tablespoons chipotle chillies, chopped
Place tomatoes in a soup pot. Add vegetables and spices. Cook for 30 minutes, stirring occasionally. Add beans and simmer 20 more minutes until thick and flavours blend
