Description

Black garlic is made fresh Allium sativum garlic bulbs that are dried slowly at low temperatures in a process called the Maillard reaction

The preserving destroys the natural colours of garlic turning the cloves into the distinct black colour

While this was done originally in Asia to simply preserve the garlic for use out of season, it quickly become used for its change in flavour, with a deeper sweeter flavour 

Not to mention the usual health benefits garlic provides - antioxidants and other nutrients

There are two normal methods for producing black garlic, the supermarket quick way or the longer correct way

The short way creates black garlic with its outer case left to be solid, while this creates a better looking garlic bulb, the shorter drying process doesn't enhance the black garlic sweetness or deep flavour that it can be 

The longer drying process is everything black garlic can be, only issue is the softness of the bulbs can be problematic when posting, to do away with this we have sourced from a great garlic company in the UK black garlic cloves, already to go

They will come in a slightly "mushed" state, this is natural and how it should be, the bag will continue a little garlic juice

    Black garlic

    Love black garlic, I use it when I make my hot sauces, a well round flavour not like fresh garlic but full of umami and a great addition to my store cupboard. I prefer the separate cloves instead of the whole bulbs Spice on the Web used to sell.

    Black Garlic Cloves

    My first time trying these so used with caution in a soup recipe. Taste was definitely smokier but a great result. Will be braver next time and will probably use around 1 teaspoon per litre (chopped) in a lentil & sweet potato/squash soup.

    Always buy my spices here, and all excellent as usual So dont know what happened here, this was quite mushy, likely done at too high a temp, hopefully just a one-off
