Spanish Paella Recipe
Traditional Paella (Serves 4)
(Not trying to debate Chorizo tradition here, call this arroz con cosas if it helps ?)

Ingredients:
Saffron threads: a pinch
Smoked paprika: 1 tsp
Garlic powder: 1 tsp
Chicken thighs: 4 (about 500g), cut into pieces
Chorizo: 200g, sliced
Short-grain rice: 300g
Chicken broth: 1 litre
Onion: 1, chopped
Garlic cloves: 3, minced
Bell peppers: 2, sliced
Peas: 100g
Olive oil: 3 tbsp

Instructions:
Heat oil in a large pan, brown chicken and chorizo, then set aside.
In the same pan, sauté onions, garlic, and bell peppers. Add smoked paprika, garlic powder, and saffron.
Add rice, stir to coat with the spices, then pour in the chicken broth.
Place chicken and chorizo back in the pan. Simmer without stirring until rice is cooked (about 20 minutes).
Add peas, cook for 5 more minutes. Serve with lemon wedges.
Patatas Bravas with Spicy Aioli Recipe
Patatas Bravas with Spicy Aioli (Serves 4)

Ingredients:
Smoked paprika: 1 tsp
Garlic powder: 1 tsp
Potatoes: 4 large, cut into cubes
Olive oil: 4 tbsp
Mayonnaise: 200 ml
Lemon juice: 1 tbsp
Salt: 1 tsp
Pepper: 1/2 tsp

Instructions:
Toss potato cubes in olive oil, salt, and pepper. Bake at 200°C for 30 minutes until crispy.
Mix mayonnaise, smoked paprika, garlic powder, and lemon juice to make the aioli.
Serve potatoes hot with the spicy aioli on the side.
