Steak Burritos - Perfect Mexican Sandwich
Serves 4-6
Ingredients
- 900g Flank / Skirt Steak
- Olive Oil
- Kosher Salt and freshly ground pepper
Marinade
- 4 Garlic Cloves Minced
- 1tsp of Jalapeno Powder or Amarillo Powder (if using pods, hydrate 10g of Jalapeno Flakes and/or Amarillo Pods, chopped
- 1 Tsp Cumin powder
- 1 Large handful of fresh coriander finely chopped
- Kosher Salt and Ground Pepper
- 2 limes Juiced
- 2 Tbsp White Vinegar
- 1/2 Tsp Sugar
- 1/2 Cup of Olive Oil
Instructions
- Lay the steak out in a bowl - big enough to lay out flat, combine the marinade and cover over the steal, cover and marinate in the fridge for 1-4 hours
- Heat your grill or cast iron griddle to a high heat
- Cook the steak for a few minutes on each side to a medium - well done or how you like
- Rest the steak on a wooden board for 5 mins and then slice against the grain diagonal
- Serve with tortillas, fresh chunked avocado and fresh salsa
