Carne Asada Recipe

Steak Burritos - Perfect Mexican Sandwich

Serves 4-6

Ingredients

  • 900g Flank / Skirt Steak
  • Olive Oil
  • Kosher Salt and freshly ground pepper

Marinade

  • 4 Garlic Cloves Minced
  • 1tsp of Jalapeno Powder or Amarillo Powder (if using pods, hydrate 10g of Jalapeno Flakes and/or Amarillo Pods, chopped
  • 1 Tsp Cumin powder
  • 1 Large handful of fresh coriander finely chopped
  • Kosher Salt and Ground Pepper
  • 2 limes Juiced
  • 2 Tbsp White Vinegar
  • 1/2 Tsp Sugar
  • 1/2 Cup of Olive Oil

Instructions

  • Lay the steak out in a bowl - big enough to lay out flat, combine the marinade and cover over the steal, cover and marinate in the fridge for 1-4 hours
  • Heat your grill or cast iron griddle to a high heat
  • Cook the steak for a few minutes on each side to a medium - well done or how you like
  • Rest the steak on a wooden board for 5 mins and then slice against the grain diagonal
  • Serve with tortillas, fresh chunked avocado and fresh salsa
