As with our feelings on using authentic chillies for cooking our favourite dishes, we are happy to introduce Authentic Cajun Seasoning from Louisiana full of the Deep South and French Influence
Cajun seasoning for us is about an even blend of good flavour followed by a slight kick - mild in aspects
Use in the dish of your choice and add meat and vegetables are suited, for me, King Prawn Cajun Soup or Cajun Shrimp if you prefer
For quick awesome chicken kebabs, marinate 250g of chicken cubes in lemon juice and 2-3tsps of seasoning, fridge for 2-48hrs (longer the better) and cook thoroughly
Serve with flatbread lettuce and a little mayo for the best wrap!

What is it?: A salt-free Louisiana-style seasoning built around paprika, black and white pepper, cumin, coriander, mustard, fennel, garlic, onion and chilli.
Flavour: Savoury and aromatic with warm paprika, layered pepper and cumin, followed by a mild chilli lift rather than fierce heat.
Common Uses: Cajun chicken, prawns, fish, vegetables, rice dishes, soups and kebabs.
Pairs Well With: Chicken, king prawns, peppers, onions, tomatoes, rice and lemon.
How to Use: Use dry as a rub or mix 2-3 teaspoons with lemon juice for around 250g of meat or seafood before marinating.
Compare With: Compared with Creole seasoning, this blend is less tomato-led and more focused on pepper, cumin and the direct flavours associated with Cajun cooking.
Substitute: Use Bayou Seasoning for a related Louisiana profile with more thyme and oregano, or Creole Seasoning for a more herb-led tomato dish.
Storage: Store sealed in a cool, dry place away from direct sunlight and steam.
Good to Know: The blend contains mustard and no added salt, allowing seasoning to be adjusted separately.

Cajun spices (no salt)
This mix is delicious. Just rub over chicken, leave 30 mins and cook. Many mixes with salt end up being too salty for us, but this being no salt is perfect.
