Don’t let the name Guajillo warn you off though, as with all Mexican Chilli the Guajillo has been cultivated by generations of master famers
Guajillo chilli is Tannic and Spicy in flavour, goes great with all vegetables and meat dishes
Makes a great Guajillo dipping sauce as well and usually found in Mexico in many forms and meals

The Guajillo pods are whole and include the seeds, however due to the drying process the seeds are sterilised and it is very doubtful a seed will germinate

Best flavour chillii
Best flavour chilli to use for the Carne con chille Colorado recipes or the English version of Chilli con Carne. It has a imperceptible level of spice on the palet, with heath that slowly builds up creating the feeling of comfort food. Best way to use it is to hydrate the chillies in boiling water for 15 minutes ( before that remove the seeds and stem and don't rub your face) After the chillies are hydrated, move only the chillies in the blender with a cup with fresh hot water, blend until smooth, drain it through a sieve. (If you use the water in which the chillies have been hydrating the sauce will be bitter - that's why I prefer not to use it). Now the guajillo chilli sauce can be used for cooking. For Chilli con Carne at 500g of mince use 5 guajillo chillies; for Beef stew at 2pounds of beef chuck I use 8 guajillo chillies; I useally add this paste after I brown the meat. Spiceontheweb is the best supplier for these chillies and also Mexican Oregano; that among all other spices and sauces that they supply; always reliable and always with good dates for the products.

Colourful mild but tasty
They produce a mild tasty tomato-red sauce. Combine with hotter chillies , eg a couple De Arbols for a lip-smacking but not screaming hot experience. Perfect with grilled meat.

Lovely. As we speak,they are sitting in my 'fridge blending with other ingredients to make mexican chorizo sausages. The smell is amazing when I open the 'fridge door. Can't wait.
