Breakfast with Chilli is the best way to start your day
Ingredients
- 6 Eggs
- 2 Spring Onions finely chopped
- 1 Tomato peeled and chopped
- 1/2 Tsp of Green Jalapeno Powder
- 1/2 Tsp Aji Amarillo Powder (Add less for lower heat and less flavour)
- 2 Tbsp Olive Oil
- Mexican Oregano
- Salt to Taste
- Sprinkle with fresh Coriander or parsley
Instructions:
- Heat the oil and cook the spring onions for a few minutes then add the tomato, cook through a few minutes until they soften
- Add the chilli powders and stir through to mix well and heat the oils and flavours for a minute or two
- Pour in the eggs and salt if using and stir through, cook through to your requirements
- Serve with bread of heated tortillas / Flat Breads
