Huevos al Mexicana Eggs Recipe

Breakfast with Chilli is the best way to start your day

Ingredients

  • 6 Eggs
  • 2 Spring Onions finely chopped
  • 1 Tomato peeled and chopped
  • 1/2 Tsp of Green Jalapeno Powder
  • 1/2 Tsp Aji Amarillo Powder (Add less for lower heat and less flavour)
  • 2 Tbsp Olive Oil
  • Mexican Oregano
  • Salt to Taste
  • Sprinkle with fresh Coriander or parsley

Instructions:

  • Heat the oil and cook the spring onions for a few minutes then add the tomato, cook through a few minutes until they soften
  • Add the chilli powders and stir through to mix well and heat the oils and flavours for a minute or two
  • Pour in the eggs and salt if using and stir through, cook through to your requirements
  • Serve with bread of heated tortillas / Flat Breads
