Quick Reference
What is it?: A salt-free Bavarian-inspired blend of paprika, coriander, onion, sage, thyme, oregano, garlic, cayenne, rosemary, fennel and mustard.
Flavour: Warming, herbal and savoury with mild cayenne heat and a mustard-fennel background.
Common Uses: Roast or grilled chicken, sausages, potatoes, cabbage and roasted vegetables.
Pairs Well With: Pork, chicken, mustard, potatoes, pickled vegetables and dark bread.
How to Use: Rub onto food with oil before roasting, grilling or barbecuing, then add salt to taste.
Compare With: More herbaceous than a paprika-only barbecue rub and less sweet than many American grill blends.
Substitute: Use paprika, mustard, garlic, thyme and rosemary with a pinch of cayenne.
Storage: Store sealed in a cool, dry place away from direct sunlight, moisture and cooking steam.
Good to Know: Mustard powder is included, while the no-salt recipe suits foods already served with salty sausages or pickles.

Octoberfest Seasoning
Not sure how it's German style, but liked the mix of spices. However, we just tried it on chicken wings and thought it was only okay; didn't really love it. It won't go to waste, as I'll certainly use it perhaps in combination with a marinade or stew, but as a stand-alone rub, it wasn't successful for us.
