Chilli con carne was created in San Antonio, Texas in the early 19th century using local ingredients - beef and chilli peppers with other local ingredients reputed to be by Mexican woman making a living my stewing up large vats and selling to the local towns
Since then, different regions have used to different ingredients again based on what is local to them
