Quick Reference
What is it?: An Indonesian fish seasoning made with sugar, black pepper, chilli, garlic, mint and parsley.
Flavour: Sweet-savoury with pepper and chilli warmth, fresh herbal notes and enough garlic to suit fried or grilled fish.
Common Uses: Ikan Goreng, fried fish, grilled seafood, fish cakes and lightly spiced vegetable dishes.
Pairs Well With: White fish, prawns, lime, rice, cucumber, mint and parsley.
How to Use: Rub lightly onto fish before frying or mix with a little oil and citrus juice for a short marinade.
Compare With: Compared with Ajam Panggang, this is lighter and herbier, designed for fish rather than a sticky chicken glaze.
Substitute: Use black pepper, garlic, chilli and a pinch of sugar as a simple substitute.
Storage: Store sealed in a cool, dry place away from direct sunlight and steam.
Good to Know: Mint and parsley keep the blend fresher than many heavy curry-style fish seasonings.

Ikan Goreng
We tried this with grilled fish and didn't like it at all unfortunately. The combination of spices reads well and it may work in a different sort of dish, but not our cup of tea.
