Is a curry a curry, in general yes as they all follow a set form which is awesome flavour!

India is a massive country and each region has its own style of cuisine, the Punjab region is found in Northern India, just above New Delhi, the north is known for two heat types - hot and mild with Punjabi being Madras to Vindaloo heat in UK curry terms

Highly pungent flavours, good backdrop of heat this seasoning will create a great curry

For basic curries, chop and dice 1 medium onion and fry in ghee or your choice until very soft and translucent but do not burn, add 1 tablespoon of seasoning (10-15g) and one large chicken breast diced and sliced, salt season as you like and stir and cook through thoroughly, serve with rice and flat breads, enjoy

Can marinate chicken chunks in lemon juice for 2-48hrs for wonderful chicken kebabs

Quick Reference

What is it?: A hot, salt-free North Indian-style masala with ginger, garlic, cayenne, pepper, cinnamon, mustard, turmeric, cardamom, cumin, fenugreek and bay.

Flavour: Pungent, warming and aromatic with a Madras-to-Vindaloo level heat in familiar UK curry terms.

Common Uses: Chicken curry, lamb, vegetables, kebabs, lentils and rich onion-based sauces.

Pairs Well With: Ghee, onion, tomato, yoghurt, lemon, rice and flatbreads.

How to Use: Fry onion until soft, add 10-15g seasoning with the main ingredient, then cook through and season separately.

Compare With: Hotter and more mustard-led than a mild curry powder, with fenugreek, cardamom and bay adding depth.

Substitute: Use a hot curry powder strengthened with ginger, garlic, fenugreek and cardamom.

Storage: Store sealed in a cool, dry place away from direct sunlight, moisture and cooking steam.

Good to Know: Yellow mustard is an ingredient, while the absence of salt leaves control of final seasoning with the cook.
