The salt is obtained from from the floodplains of Spreewald - a biosphere reserve are in Brandenburg Germany
Using traditional manual skills of cold smoking the local salt is smoked with Alder Wood for 16 days with 3 breaks per day, the salt is rolled and turned to produce an even smoked salt in small batches
Knowing how the climate of the day affects the smoking process is the skill passed down by generations meaning the smoking process can be shorter or longer with more breaks but never less per day

Almost the best smoked version of Salt
This Aldersmoke Salt is rocking my dishes and is very potent. A little goes a long way in my soups, seasonings, rubs and yes, even curries! I have tried them both - the Viking and the Alder - this is the most smokey.
