What is it?
Whole Brazilian annatto seeds used for their natural red-orange colour and mild earthy seasoning.
Flavour
Gently peppery, earthy and slightly nutty, with bitterness possible if the seeds are scorched or overused.
Common uses
Infused oils, rice, stews, marinades, sauces and Latin American or Caribbean dishes.
How to use
Warm gently in oil until the colour develops, then strain out the seeds. Avoid frying them at high heat.
Pairs well with
Garlic, oregano, cumin, citrus, chilli, pork and chicken.
Good to know
Whole annatto is especially suited to making coloured oil; the seeds are normally strained out rather than left in the finished dish.
