Dill Seeds - Quick Reference

What is it?: The dried seeds of the dill plant, used mainly for pickling, breads and robust savoury cooking.

Flavour: Warm, aromatic and slightly bitter, with caraway-like and anise notes stronger than dill leaf.

Common uses: Use in pickles, breads, cabbage dishes, potato dishes, fish, soups and spice blends.

Pairs well with: Pairs well with cucumber, cabbage, potato, mustard, vinegar, fish and caraway.

How to use: Use whole for infusion and texture, or crush lightly to release the oils more quickly.

Compare with: Dill seed is stronger and more earthy than dill tips and tolerates longer cooking.

Substitute: Caraway can substitute for the warm seed character, though it is more pungent and less distinctly dill-like.

Good to know: Dill seed is particularly useful in pickling because its flavour stands up well to vinegar and prolonged storage.
