Dill Tips - Quick Reference
What is it?: Dried dill leaves and tender tips, offering the characteristic flavour of the herb without fresh moisture.
Flavour: Fresh-tasting, grassy and lightly anise-like, with a soft citrus and parsley character.
Common uses: Use in fish dishes, potatoes, soups, sauces, pickles, eggs, sour cream dips and Eastern European cooking.
Pairs well with: Pairs well with salmon, cucumber, potato, beetroot, yoghurt, lemon, mustard and black pepper.
How to use: Add towards the end of cooking to preserve the more delicate herbal aroma, or allow time to rehydrate in cold dips.
Compare with: Dill tips are softer and more herbaceous than dill seed, which is warmer, stronger and more suited to pickling.
Substitute: Tarragon can replace some of the anise character, while parsley gives freshness without the distinctive dill flavour.
Good to know: Dried dill is light in weight but broad in volume, so measuring by spoon is usually more practical than judging by appearance.
