Green Lentils Organic - Quick Reference
What is it?: Organic green lentils that retain a distinct shape and pleasantly firm texture after cooking.
Flavour: Earthy, peppery and mildly nutty.
Common uses: Salads, soups, casseroles, vegetarian fillings, side dishes and warm grain bowls.
Pairs well with: Bay, thyme, garlic, mustard, black pepper, carrots and onions.
How to use: Rinse and simmer until tender but still intact; soaking is not normally necessary.
Compare with: They hold their shape better than red lentils and are milder than small dark speckled lentils.
Substitute: Brown lentils are the closest general substitute.
Storage: Keep dry, airtight and away from humidity.
Good to know: Green lentils are particularly suited to salads because the cooked lentils remain separate rather than collapsing into a puree.
