What are the main flavours of Jerk, what should be left behind on your taste buds? For us it is a great blend of nutmeg, allspice, sweetness and the classic thyme with a great backdrop of heat as you would expect from Caribbean Cuisine but not over powder for most people
Marinate 250g of Chicken Breast in the juice of one lemon and 2-3 teaspoons of seasoning (20-30g) or Marinate Chicken Thighs in again 1 lemon juice and 2 teaspoons of seasoning on the skin and leave for 2hrs to 48 hours
Add the level and type of salt you like, but adding lemon juice creates that flavour of salt already so you do not need much if any at all
Cook the chicken as normal on skewer or tray on the BBQ, grill or oven and serve with rice, beans chips - its all good! Very Good

What is it?: A salt-free Jamaican jerk seasoning combining allspice, thyme, paprika, coarse black pepper, habanero, nutmeg, ginger, garlic and onion.

How to Use: Mix 2-3 teaspoons with citrus juice for about 250g of meat and marinate for 2-48 hours before cooking thoroughly.
Compare With: Compared with Jerk COOL, this blend contains habanero and gives the hotter, more traditional chilli finish.
Substitute: Use Jerk COOL for the same allspice-thyme direction without the strong habanero heat.
Storage: Store sealed in a cool, dry place away from direct sunlight and steam.
Good to Know: Allspice is the defining jerk spice here; it is supported by thyme and nutmeg rather than used as a minor background note.

A hot spice but pork steaks/chops taste wonderful after marinating and cooking. Quite a different flavour to the Cajun seasoning.
