Orange Peel Granules - Quick Reference
What is it?: Dried Spanish orange zest cut into granules, with the strongly bitter white inner pith removed as far as practical.
Flavour: Sweet, fragrant orange oil with a balanced citrus bitterness.
Common uses: Baking, tea blends, mulled wine, sauces, tagines, chocolate, preserves and dry seasonings.
Pairs well with: Cinnamon, clove, ginger, fennel, chocolate, duck, pork and cranberry.
How to use: Add directly to recipes containing moisture or steep in hot liquid and strain. Start modestly because dried peel is concentrated.
Compare with: Smaller and easier to distribute than the 3-5mm cut, while retaining more texture than orange peel powder.
Substitute: Fresh zest can be used where moisture is not a concern; orange powder is better for completely smooth blends.
Storage: Keep airtight, cool and dry.
